The An-chow-vie


One of my favorite dinners of late is this little dish. Simplistic and tasty - you'll be pining for extras. Enjoy......

What you'll need:

  • 8 Anchovy Fillets
  • Half a fresh red chilli, sliced.
  • 1 heaped tablespoon small capers (rinse if their salty)
  • Olive oil
  • Zest and juice of half a lemon.
  •  Tin of tomatoes (with herbs / garlic)
  • 1 clove of garlic
  • Linguine 
  • Parmesan grated.
  • Salt & Pepper
  • Parsley

 

Firstly cut the anchovies in half lengthways and add them to a bowl with the sliced chilli. Add the capers, 1 tablespoon of olive oil, 1 tablespoon of lemon juice and the lemon zest. Leave the anchovies to marinade in the mixture for at least 15 minutes.

Next: Heat a saucepan and add a splash of oil and the diced garlic. Cook until the garlic becomes translucent (about 2-3 mins). Add the can on tomatoes some salt and pepper and cook for about 15-20. Season again if needed.

While the tomatoes are cooking prepare the linguine by adding it to some salted water until al dente. After you have strained the water from it, add in your grated Parmesan and leave to melt. When the tomatoes have finished cooking add them to the linguine along with the anchovy mixture and fold in together with a wooden spoon gently. Season with salt and pepper, chopped parsley, more parmesan and enjoy this delicious and simplistic dish. WINNER!
